Ingredients
  

  • 600 g baby potatoes halved
  • 3 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon dried thyme
  • Fresh parsley for garnish

Instructions
 

Preheat the oven

  • Set oven to 200°C. Line a baking tray with parchment paper or lightly grease it to prevent sticking.

Prepare the potatoes

  • Wash and cut baby potatoes into halves. Make sure pieces are equal for even cooking.

Make mustard mixture

  • In a bowl, mix olive oil, Dijon mustard, salt, pepper, garlic powder and thyme until well combined.

Coat the potatoes

  • Add potatoes into the bowl. Toss well so all pieces are coated evenly with the mustard mixture.

Arrange on tray

  • Spread potatoes in a single layer on baking tray. Do not overcrowd for best roasting results.

Roast the potatoes

  • Bake for 30 to 35 minutes. Turn once halfway to ensure even golden color on all sides.

Check doneness

  • Potatoes should be golden and crispy outside. Inside should be soft when pierced with a fork.

Garnish

  • Remove from oven and sprinkle fresh parsley on top for extra flavor and color.
