Ingredients

  • 4 boneless chicken breasts
  • 3 fresh peaches sliced
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 garlic cloves minced
  • 1 tablespoon lime juice
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon butter
  • 1 small onion chopped
  • ¼ cup chicken broth
  • Fresh parsley for garnish

Instructions

Prepare the Chicken

  • Pat the chicken dry with paper towels. Season both sides with paprika, chili powder, salt and black pepper evenly.

Slice the Peaches

  • Wash the peaches carefully. Remove the pits and cut them into thin slices for easier cooking and blending later.

Heat the Pan

  • Place a large skillet over medium heat. Add olive oil and let it warm for about one minute.

Cook the Chicken

  • Add seasoned chicken breasts to the skillet. Cook each side for about six minutes until golden and fully cooked.

Remove the Chicken

  • Transfer cooked chicken onto a clean plate. Cover loosely with foil to keep the chicken warm and juicy.

Cook the Onion

  • Add butter and chopped onion into the same skillet. Stir often until onions become soft and lightly golden.

Add Garlic

  • Mix minced garlic into the onions. Cook for one minute until fragrant but avoid burning the garlic pieces.

Add the Peaches

  • Place peach slices into the skillet. Stir gently and cook until peaches become soft and release natural juices.

Make the Sauce

  • Add honey, lime juice and chicken broth. Stir everything together and simmer slowly for five minutes until thickened.

Blend the Sauce

  • Carefully blend the peach mixture until smooth. Use a blender or immersion blender for creamy texture and rich flavor.

Return Chicken to Pan

  • Place chicken back into the skillet. Spoon peach sauce over each piece and simmer for two more minutes.

Garnish and Serve

  • Sprinkle fresh parsley on top before serving. Enjoy warm with your favorite side dishes for a complete meal.

Notes

  • Use ripe peaches for sweeter flavor and smoother sauce.
  • Grill the chicken instead of pan-cooking for smoky taste.
  • Add crushed red pepper for spicy heat.
  • Use chicken thighs for extra juicy texture.
  • Replace honey with maple syrup for different sweetness.
  • Add fresh basil for more fresh flavor.
  • Try canned peaches when fresh peaches are unavailable.
  • Marinate chicken for one hour before cooking for deeper flavor.
