Ingredients
  

  • 2 pounds beef chuck cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion chopped
  • 3 garlic cloves minced
  • 2 tablespoons flour
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 3 carrots sliced
  • 3 potatoes cubed
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup mushrooms optional
  • Fresh parsley for garnish

Instructions
 

Brown the beef

  • Heat oil in a large pot. Add beef cubes and cook until browned on all sides. This adds rich flavor to the stew.

Remove and set aside

  • Take the browned beef out of the pot and keep it aside while preparing the base.

Cook onion and garlic

  • In the same pot, add onion and cook until soft. Add garlic and cook for one minute.

Add flour

  • Sprinkle flour into the pot. Stir well for one minute to remove raw taste and help thicken the stew.

Add liquids

  • Pour in beef broth and red wine slowly. Stir well to combine and avoid lumps.

Add tomato paste

  • Mix in tomato paste and stir until fully blended into the liquid.

Add beef back

  • Return the browned beef into the pot. Stir to combine with the sauce.

Add vegetables and seasoning

  • Add carrots, potatoes, thyme, bay leaf, salt and pepper. Mix everything well.

Simmer the stew

  • Cover and cook on low heat for about 2 hours. Stir occasionally until beef becomes tender.

Finish and serve

  • Remove bay leaf, garnish with parsley and serve hot. Enjoy this rich and hearty stew.
