Ingredients
  

  • 1 pound dried black-eyed peas
  • 6 slices bacon chopped
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 6 cups chicken broth
  • 1 smoked ham hock optional
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 bay leaf
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions
 

Soak the Peas

  • Soak dried black-eyed peas overnight and drain them.

Cook Bacon

  • Cook chopped bacon in a large pot until crispy.

Add Onion

  • Add chopped onion and cook until soft.

Add Garlic

  • Stir in garlic and cook for one minute.

Add Peas

  • Add drained black-eyed peas to the pot.

Add Broth

  • Pour chicken broth into the pot.

Add Seasonings

  • Add salt, pepper, paprika and bay leaf.

Add Ham Hock

  • Place ham hock into the pot for extra flavor.

Simmer

  • Cook on low heat for 1 to 1½ hours until tender.

Remove Ham Hock

  • Remove ham hock and discard bones.

Garnish

  • Top with fresh parsley before serving.

Notes

  • Use canned black-eyed peas for faster cooking.
