Ingredients
  

  • 2 cups couscous
  • 2 cups chicken broth or vegetable broth
  • 3 tablespoons olive oil
  • 1/2 cup pine nuts
  • 1 small onion finely chopped
  • 2 tablespoons butter
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons fresh mint chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions
 

Toast the pine nuts

  • Heat a skillet over medium heat. Toast pine nuts until golden and fragrant.

Cook onion

  • In a saucepan, cook onion in butter until soft.

Add broth

  • Pour broth into the saucepan and bring it to a boil.

Add couscous

  • Stir in couscous and remove from heat.

Cover and rest

  • Cover the pan and let couscous sit for five minutes.

Fluff couscous

  • Use a fork to separate the grains gently.

Add mix-ins

  • Stir in toasted pine nuts, herbs, olive oil, lemon juice, salt and pepper.

Serve

  • Serve warm or at room temperature.
