Ingredients
  

For the Chicken

  • 4 bone-in skin-on chicken thighs (or breasts)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

For the Lemon Orzo

  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 2 tablespoons butter
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley chopped
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions
 

Season Chicken

  • Pat chicken dry and season with salt, pepper, garlic powder and paprika.

Cook Chicken

  • Heat olive oil in a skillet over medium-high heat. Cook chicken skin-side down for 6–8 minutes until crispy. Flip and cook another 6–8 minutes until fully cooked.

Rest Chicken

  • Remove chicken and let it rest while preparing orzo.

Cook Orzo

  • In a pot, bring chicken broth to a boil. Add orzo and cook until tender.

Add Flavor

  • Stir in butter, lemon juice, lemon zest and Parmesan cheese.

Add Herbs

  • Mix in fresh parsley and adjust salt and pepper.

Serve

  • Place orzo on a plate and top with crispy chicken.

Garnish

  • Add extra parsley or lemon zest if desired.
