Ingredients
  

  • 4 cups whole milk
  • 1 cup heavy cream
  • 2 tablespoons white vinegar or lemon juice
  • 1/2 teaspoon salt

Instructions
 

Heat Milk & Cream

  • In a large pot, heat milk and cream over medium heat until hot but not boiling.

Add Salt

  • Stir in salt and mix well.

Add Acid

  • Remove from heat and gently stir in vinegar or lemon juice.

Let It Curdle

  • Let the mixture sit for 10 minutes. Curds will form.

Strain Ricotta

  • Line a strainer with cheesecloth and place over a bowl. Pour mixture into it.

Drain

  • Let it drain for 10–15 minutes for soft ricotta, longer for thicker texture.

Transfer

  • Move ricotta to a bowl once desired consistency is reached.

Serve or Store

  • Use immediately or refrigerate.

Notes

  • Use fresh milk for best results
  • Do not boil the milk to avoid tough texture
  • Drain longer for thicker ricotta
  • Add herbs or garlic for flavored ricotta
