Ingredients
  

For the crust:

  • 1 ½ cups all-purpose flour
  • ½ cup cold butter cubed
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • 3 –4 tablespoons cold water

For the filling:

  • 3 pears peeled and sliced
  • ¼ cup sugar
  • 2 tablespoons butter melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

For glaze:

  • 2 tablespoons apricot jam
  • 1 tablespoon water

Instructions
 

Prepare the dough

  • In a bowl, mix flour, sugar and salt. Add cold butter and rub until crumbly like sand.

Form the dough

  • Add cold water slowly and mix until dough forms. Do not overmix. Wrap and chill for 30 minutes.

Preheat the oven

  • Set oven to 180°C. Grease tart pan lightly so the crust does not stick.

Roll the dough

  • Roll chilled dough on a floured surface. Place it into tart pan and press gently into shape.

Prepare the pears

  • Peel and slice pears thinly. Toss them with sugar, lemon juice and vanilla for extra flavor.

Arrange the filling

  • Place pear slices neatly over the crust. Brush melted butter over the top for richness.

Bake the tart

  • Bake for 35 to 40 minutes until crust is golden and pears are soft and slightly caramelized.

Prepare glaze

  • Heat apricot jam with water in a small pan. Stir until smooth and slightly warm.

Finish and serve

  • Brush glaze over baked tart. Let it cool slightly, then slice and serve warm or at room temperature.

Notes

  • Use Bartlett or Anjou pears for best results
  • Add cinnamon for warm flavor
  • Use puff pastry for quick version
  • Add almond cream for richer filling
  • Chill dough well before rolling
  • Do not overbake to avoid dry crust
  • Serve with vanilla ice cream
