Ingredients
  

  • 1 cup bulgur wheat
  • 1 1/2 cups boiling water
  • 2 cups fresh parsley finely chopped
  • 1/2 cup fresh mint chopped
  • 2 tomatoes diced
  • 1 cucumber diced
  • 4 green onions chopped
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

Soak bulgur

  • Place bulgur in a bowl and pour boiling water over it. Cover and let it soften.

Fluff bulgur

  • After 10 minutes, fluff bulgur with a fork.

Chop vegetables

  • Dice tomatoes, cucumber and green onions.

Chop herbs

  • Finely chop parsley and mint.

Make dressing

  • Whisk olive oil, lemon juice, salt and pepper.

Combine ingredients

  • Mix bulgur, vegetables and herbs in a large bowl.

Add dressing

  • Pour dressing over the salad and toss well.

Chill and serve

  • Refrigerate for 30 minutes before serving.

Notes

  • Use fresh herbs only
  • Add feta cheese
  • Add chickpeas for protein
  • Use quinoa instead of bulgur
  • Chill before serving
  • Add pomegranate seeds
  • Adjust lemon to taste
