Ingredients

  • 1/2 cup butter
  • 1 cup heavy cream
  • 2 cloves garlic minced
  • 1 cup Parmesan cheese grated
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg optional
  • Fresh parsley for garnish

Instructions

Melt the butter

  • Place a saucepan on medium heat. Add butter and let it melt slowly without browning to keep the flavor smooth.

Add garlic

  • Add minced garlic to melted butter. Cook for one minute until fragrant but not browned to avoid bitter taste.

Pour cream

  • Slowly add heavy cream into the pan. Stir gently and let it warm up without boiling too fast.

Simmer the sauce

  • Let the mixture cook on low heat for a few minutes. Stir often until it starts to thicken slightly.

Add cheese

  • Add grated Parmesan cheese slowly while stirring. Mix until cheese melts completely and sauce becomes creamy and smooth.

Add seasoning

  • Add salt, black pepper and nutmeg if using. Stir well and adjust seasoning according to your taste.

Check consistency

  • If sauce is too thick, add a little milk. If too thin, cook a bit longer while stirring.

Finish and serve

  • Remove from heat and garnish with fresh parsley. Serve immediately over pasta for best taste and texture.

Notes

  • Use freshly grated Parmesan for best flavor
  • Do not boil sauce after adding cheese
  • Add grilled chicken or shrimp for protein
  • Use milk instead of cream for lighter version
  • Add mushrooms for extra taste
  • Stir constantly to prevent lumps
