Ingredients
  

  • 3 ripe bananas mashed
  • ½ cup melted butter
  • ¾ cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ½ cups all-purpose flour
  • ½ teaspoon cinnamon optional
  • ½ cup chopped walnuts optional

Instructions
 

Preheat oven

  • Set oven to 175°C and grease a loaf pan.

Mash bananas

  • In a bowl, mash bananas until smooth.

Add wet ingredients

  • Mix in melted butter, sugar, egg and vanilla.

Add dry ingredients

  • Stir in baking soda, salt, cinnamon and flour.

Combine gently

  • Mix just until combined. Do not overmix.

Add nuts

  • Fold in walnuts if using.

Pour batter

  • Pour into prepared loaf pan.

Bake

  • Bake for 50–55 minutes until golden and cooked through.

Cool

  • Let cool for 10 minutes, then remove from pan.

Slice and serve

  • Serve warm or at room temperature.
