Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 3 garlic cloves minced
  • 4 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme

For Dumplings:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 tablespoons butter melte

Instructions

Heat Butter and Oil

  • Heat butter and olive oil in a large pot over medium heat until melted and slightly hot.

Cook Vegetables

  • Add onion, carrots and celery. Cook for 5 minutes until soft and fragrant, stirring occasionally.

Add Garlic

  • Add minced garlic and cook for one minute until fragrant but not burned.

Pour Broth

  • Add chicken broth and bring to a gentle boil. Stir well to combine all flavors.

Add Chicken

  • Add shredded chicken into the pot. Mix well so the chicken absorbs the broth flavors.

Season the Soup

  • Add salt, pepper and thyme. Stir and let it simmer for 10 minutes to develop flavor.

Make Dumpling Dough

  • In a bowl, mix flour, baking powder, and salt. Add milk and melted butter to form soft dough.

Roll the Dough

  • Roll the dough on a floured surface. Keep it about 1/4 inch thick for perfect dumplings.

Cut Dumplings

  • Cut dough into small squares or strips. Keep them ready for cooking.

Add Dumplings

  • Drop dumplings into simmering soup one by one. Do not overcrowd the pot.

Cook Dumplings

  • Let dumplings cook for 15 minutes. Stir gently so they do not stick together.

Check Texture

  • Dumplings should be soft and cooked through. The broth will thicken slightly.

Serve Hot

  • Serve warm in bowls. Enjoy the creamy, comforting flavor with your family.

Notes

  • Use rotisserie chicken to save time
  • Add cream for a richer broth
  • Use herbs like parsley for freshness
  • Make dumplings smaller for even cooking
  • Do not overmix dough to keep dumplings soft
  • Add peas for extra color and nutrition
