Ingredients
  

  • 2 tablespoons olive oil or butter
  • 1 onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 6 cups chicken broth
  • 2 cups cooked chicken shredded
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions
 

Heat Oil

  • In a large pot, heat olive oil or butter over medium heat.

Cook Vegetables

  • Add onion, carrots and celery. Cook for 5–7 minutes until softened.

Add Garlic

  • Stir in garlic and cook for 1 minute until fragrant.

Add Broth

  • Pour in chicken broth and bring to a boil.

Add Chicken

  • Add shredded chicken and stir well.

  • Add thyme, parsley, salt and pepper.

Cook Noodles

  • Add egg noodles and cook until tender, about 8–10 minutes.

Simmer
