Ingredients
  

  • 6 ears fresh corn or 4 cups frozen corn
  • 1 red bell pepper diced
  • 1 cucumber diced
  • 1/2 red onion finely chopped
  • 1 cup cherry tomatoes halved
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder

Instructions
 

Cook the corn

  • Boil or grill corn until tender. Let it cool before cutting kernels off.

Prepare vegetables

  • Dice bell pepper, cucumber, onion and tomatoes.

Make dressing

  • Mix mayonnaise, sour cream, lime juice, salt, pepper and chili powder.

Combine corn and vegetables

  • Add corn and vegetables to a large bowl.

Add dressing

  • Pour dressing over the salad and toss gently.

Add herbs

  • Mix in fresh cilantro for extra freshness.

Chill the salad

  • Refrigerate for at least 30 minutes before serving.
