Ingredients
  

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup buttermilk
  • 2 eggs
  • ¼ cup melted butter
  • 2 tablespoons vegetable oil

Instructions
 

Preheat oven

  • Set oven to 200°C and heat a greased skillet inside.

Mix dry ingredients

Mix wet ingredients

  • In another bowl, whisk buttermilk, eggs, melted butter and oil.

Combine mixtures

  • Pour wet ingredients into dry and mix gently until combined.

Pour batter

  • Carefully pour batter into the hot skillet.

Bake

  • Bake for 18 to 20 minutes until golden on top.

Check doneness

  • Insert a toothpick. It should come out clean.

Cool slightly

  • Let cool for a few minutes before slicing.
