Ingredients
  

  • 2 pounds beef stew meat
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 4 carrots sliced
  • 4 potatoes cubed
  • 3 celery stalks chopped
  • 3 garlic cloves minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions
 

Brown the beef

  • Heat oil in a skillet and brown beef pieces on all sides.

Prepare vegetables

  • Chop onions, carrots, potatoes, celery and garlic.

Add to crock pot

  • Place vegetables and browned beef into the slow cooker.

Mix broth

  • Whisk beef broth, tomato paste, Worcestershire sauce, salt, pepper and thyme.

Pour mixture

  • Pour broth mixture over beef and vegetables.

Slow cook

  • Cook on low for 7–8 hours or high for 4–5 hours.

Thicken stew

  • Mix cornstarch and water, then stir into stew.

Finish cooking

  • Cook for 20 more minutes until thickened.

Serve

  • Serve warm with bread.

Notes

  • Use chuck roast for best texture
  • Add peas at the end
  • Use red wine for deeper flavor
  • Do not skip browning
