Ingredients

  • 2 cans whole green chilies drained
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 eggs
  • 1 cup milk
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

Preheat the Oven

  • Preheat your oven to 350°F. Lightly grease a baking dish so the casserole does not stick.

Prepare Chilies

  • Slice green chilies open and remove seeds if needed. Lay them flat evenly at the bottom of the dish.

Add Cheese Layer

  • Sprinkle half of the cheddar and Monterey Jack cheese over the chilies. Spread evenly for good flavor in each bite.

Add More Chilies

  • Place another layer of chilies on top of the cheese. This creates a nice layered texture.

Top with Remaining Cheese

  • Add the remaining cheese over the second chili layer. Make sure it covers the entire surface.

Prepare Egg Mixture

  • In a bowl, whisk eggs, milk, flour, baking powder, salt and pepper until smooth and lump-free.

Pour the Batter

  • Pour the egg mixture evenly over the casserole. It will soak into the layers as it bakes.

Bake the Casserole

  • Bake for 35 to 40 minutes until the top is golden and the center is set.

Check Doneness

  • Insert a knife in the center. If it comes out clean, your casserole is ready to remove.

Cool Slightly

  • Let the casserole rest for 10 minutes before cutting. This helps it hold its shape.

Slice and Serve

  • Cut into squares and serve warm. Each piece will have layers of chilies and melted cheese.

Notes

  • Use fresh roasted chilies for better flavor
  • Add cooked ground beef for a hearty version
  • Try pepper jack cheese for extra spice
  • Use gluten-free flour if needed
  • Add onions or garlic for more flavor
  • Serve with salsa for a fresh taste
