Ingredients
  

  • 10 small tortillas corn or flour
  • 500 g ground beef or shredded chicken
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 2 cups enchilada sauce
  • 2 cups shredded cheddar or Mexican cheese
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • Salt and pepper to taste

Instructions
 

Preheat oven

  • Set oven to 180°C and grease a baking dish.

Cook filling

  • Heat oil in a pan and cook onion and garlic until soft.

Add meat

  • Add ground beef or chicken and cook until done.

Add spices

  • Stir in chili powder, cumin, salt and pepper.

Add sauce

  • Mix in a little enchilada sauce to keep filling moist.

Fill tortillas

  • Place filling in tortillas and roll them tightly.

Arrange in dish

  • Place rolled tortillas in baking dish seam-side down.

Add sauce and cheese

  • Pour remaining sauce over enchiladas and top with cheese.

Bake

  • Bake for 25–30 minutes until bubbly and golden.

Serve hot

  • Let cool slightly and serve warm.
