Ingredients
  

  • 4 large russet potatoes
  • 2 tablespoons butter
  • ½ cup sour cream
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons chopped green onions
  • 2 tablespoons cooked bacon bits optional

Instructions
 

Bake the potatoes

  • Preheat oven to 200°C. Bake potatoes for about 1 hour until soft inside.

Cool slightly

  • Let potatoes cool for a few minutes so they are easy to handle.

Cut and scoop

  • Cut potatoes in half lengthwise. Scoop out the inside into a bowl, leaving a thin shell.

Prepare filling

  • Mash potato flesh with butter, sour cream, milk, salt, pepper and garlic powder until smooth.

Add cheese and toppings

  • Mix in cheese, green onions, and bacon bits for extra flavor.

Fill the shells

  • Spoon the mixture back into potato skins. Fill generously.

Add topping

  • Sprinkle extra cheese on top for a golden crust.

Bake again

  • Bake for 15 minutes until heated through and cheese melts.

Serve hot

  • Serve warm and enjoy creamy, cheesy potatoes.
