Ingredients
  

  • 2 lbs beef chuck cut into cubes
  • 2 tablespoons olive oil
  • 4 slices bacon chopped
  • 1 onion chopped
  • 2 carrots sliced
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 2 tablespoons flour
  • 1 cup mushrooms sliced

Instructions
 

Prepare the beef

  • Pat beef dry and season with salt and pepper. This helps create a better sear.

Cook the bacon

  • In a Dutch oven, cook chopped bacon until crispy. Remove and set aside.

Sear the beef

  • In the same pot, sear beef in batches until browned on all sides. Remove and set aside.

Cook vegetables

  • Add onion, carrots and garlic. Cook until soft and fragrant.

Build the base

  • Stir in tomato paste and flour. Cook briefly to remove raw taste.

Add liquid

  • Pour in beef broth and stir well. Scrape bottom of pot to release flavor.

Combine everything

  • Return beef and bacon to the pot. Add thyme and mix gently.

Slow cook

  • Cover and cook on low heat or in oven at 160°C for about 2.5 hours until tender.
