Ingredients
  

  • 1 pound dried white beans soaked overnight
  • 1 pound chicken thighs
  • 1 pound smoked sausage sliced
  • 6 slices bacon chopped
  • 1 large onion chopped
  • 3 garlic cloves minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions
 

Soak Beans

  • Soak white beans overnight and drain before cooking.

Cook Bacon

  • Cook bacon in a Dutch oven until crispy.

Brown Chicken

  • Remove bacon and brown chicken thighs.

Cook Sausage

  • Brown sliced sausage and remove.

Sauté Vegetables

  • Cook onion, carrots, celery and garlic until soft.

Add Tomatoes

  • Stir in tomato paste and diced tomatoes.

Add Beans

  • Add soaked beans and mix well.

Add Broth

  • Pour chicken broth into the pot.

Add Meat Back

  • Return chicken, sausage and bacon to the pot.

Season

  • Add thyme, bay leaves, salt and pepper.

Simmer

  • Cover and cook slowly for about 2 hours.

Add Breadcrumbs

  • Transfer to baking dish and sprinkle breadcrumbs.

Bake

  • Bake at 375°F for 20 minutes until golden.

Serve

  • Garnish with parsley and serve warm.
