Ingredients
  

  • 2 cans clams with juice or fresh clams
  • 2 tablespoons olive oil
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 2 potatoes diced
  • 2 cups tomato sauce or crushed tomatoes
  • 3 cups clam juice or broth
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • 1 bay leaf
  • Fresh parsley for garnish

Instructions
 

Prepare ingredients

  • Chop onion, garlic, carrots, celery and potatoes. Drain clams if needed but keep the juice.

Cook vegetables

  • Heat olive oil in a pot. Add onion, carrots and celery. Cook until soft.

Add garlic

  • Add minced garlic and cook for one minute for extra flavor.

Add tomatoes and broth

  • Pour in tomato sauce and clam juice. Stir well to combine.

Add potatoes and seasoning

  • Add potatoes, salt, pepper, thyme and bay leaf. Mix well.

Simmer the soup

  • Cook on low heat for 20 to 25 minutes until potatoes are soft.

Add clams

  • Add clams and cook for 5 minutes. Do not overcook them.

Adjust seasoning

  • Taste and adjust salt or pepper as needed.

Serve and garnish

  • Serve hot and garnish with fresh parsley.
