  • 3 tablespoons olive oil
  • 4 garlic cloves minced
  • 1 lemon juice + zest
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon red pepper flakes optional
  • 2 tablespoons fresh parsley chopped

Instructions
 

Preheat oven

  • Set oven to 220°C and prepare a baking sheet.

Prepare shrimp

  • Pat shrimp dry for better roasting.

Make marinade

  • Mix olive oil, garlic, lemon juice, zest, salt, pepper and chili flakes.

Coat shrimp

  • Toss shrimp in marinade until well coated.

Arrange on tray

  • Spread shrimp in a single layer.

Roast

  • Bake for 10–12 minutes until shrimp turn pink and firm.

Check doneness

  • Do not overcook to keep shrimp juicy.

Add parsley

  • Sprinkle fresh parsley on top.

Serve

  • Serve hot with lemon wedges.
