Ingredients
  

  • 6 large ripe tomatoes chopped
  • 1 cup fresh breadcrumbs
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 2 tablespoons fresh parsley chopped

Instructions
 

Preheat oven

  • Preheat oven to 180°C. Grease a baking dish lightly with oil.

Prepare tomatoes

  • Wash and chop tomatoes into medium pieces. Remove excess seeds if needed.

Season tomatoes

  • Place tomatoes in a bowl. Add salt, pepper, garlic, basil and oregano. Mix gently.

Add tomatoes to dish

  • Transfer seasoned tomatoes into baking dish. Spread evenly across the surface.

Prepare topping

  • In a bowl, mix breadcrumbs, Parmesan cheese and olive oil until combined.

Add topping layer

  • Sprinkle breadcrumb mixture evenly over tomatoes. Cover the top completely.

Bake dish

  • Bake for 30–35 minutes until tomatoes are soft and topping is golden brown.

Rest slightly

  • Remove from oven and let it sit for a few minutes before serving.

Serve warm

  • Garnish with fresh parsley and serve as a side dish.
