Ingredients
  

  • 1 pound beef stew meat
  • 2 tablespoons olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1/2 cup barley
  • 1 can diced tomatoes
  • 5 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 bay leaf

Instructions
 

Heat Oil

  • Heat olive oil in a large pot over medium-high heat until hot.

Brown Beef

  • Add beef pieces and cook until browned on all sides. This adds deep flavor.

Remove Beef

  • Take beef out and set aside. Keep the juices in the pot.

Cook Vegetables

  • Add onion, carrots and celery. Cook for 5 minutes until soft and fragrant.

Add Garlic

  • Stir in garlic and cook for one minute until aromatic.

Add Barley

  • Add barley and stir well to coat with the vegetable mixture.

Add Tomatoes and Broth

  • Pour in diced tomatoes and beef broth. Mix well.

Return Beef

  • Add the beef back into the pot and stir gently.

Season Soup

  • Add salt, pepper, thyme and bay leaf. Mix well.

Simmer

  • Cover and cook on low heat for 45–50 minutes until beef is tender and barley is cooked.

Taste and Adjust

  • Taste the soup and adjust seasoning if needed.
