Ingredients
  

  • 3 cups shredded cooked chicken
  • 10 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup Monterey Jack cheese
  • 1 medium onion chopped
  • 1 can enchilada sauce
  • 1 cup heavy cream
  • 1 can diced green chilies
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt to taste
  • Black pepper to taste
  • Fresh cilantro for garnish

Instructions
 

Preheat Oven

  • Preheat oven to 375°F and grease baking dish.

Cook Onion

  • Melt butter in skillet and cook onions until soft.

Prepare Filling

  • Mix chicken, onions, green chilies, garlic powder, cumin, salt and pepper.

Warm Tortillas

  • Lightly fry or warm tortillas until flexible.

Fill Tortillas

  • Add chicken mixture and cheese to each tortilla.

Roll Enchiladas

  • Roll tightly and place seam-side down in baking dish.

Prepare Sauce

  • Mix enchilada sauce with heavy cream until smooth.

Add Sauce

  • Pour sauce evenly over enchiladas.

Add Cheese

  • Sprinkle remaining cheese on top.

Bake

  • Bake for 25 to 30 minutes until bubbly.

Rest

  • Let enchiladas rest for 10 minutes before serving.

Garnish

  • Top with fresh cilantro and serve warm.

Notes

  • Use rotisserie chicken for convenience.
  • Add black beans for extra protein.
  • Use flour tortillas if preferred.
  • Add jalapeños for spice.
