Ingredients

  • 2 cups cooked chicken shredded
  • 1 cup carrots chopped
  • 1 cup peas
  • 1 cup potatoes diced
  • 1 small onion chopped
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 cups chicken broth
  • 1 cup milk or cream
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 ready pie crust top and bottom

Instructions

Cook the vegetables

  • Boil carrots and potatoes in a pot. Cook until soft but not mushy. Drain water and set vegetables aside for later use.

Prepare the filling base

  • Heat butter in a large pan over medium heat. Add chopped onions and cook until soft and slightly golden in color.

Add flour

  • Sprinkle flour over the onions. Stir well to form a thick paste. Cook for one minute to remove raw flour taste.

Add liquids

  • Slowly pour chicken broth into the pan. Stir constantly to avoid lumps. Add milk or cream and mix until smooth and creamy.

Add seasoning

  • Add salt, black pepper, garlic powder, and thyme. Mix well. Let the sauce cook for a few minutes until thick.

Add chicken and vegetables

  • Put shredded chicken, peas, carrots, and potatoes into the sauce. Stir everything together until well combined and coated.

Prepare the crust

  • Place one pie crust in a baking dish. Press it gently to fit the bottom. Make sure edges are slightly raised.

Fill the pie

  • Pour the chicken mixture into the crust. Spread evenly using a spoon so every bite has filling.

Add top crust

  • Place the second pie crust on top. Seal the edges by pressing with fingers. Cut small slits for steam to escape.

Bake the pie

  • Preheat oven to 180°C. Bake the pie for 35 to 40 minutes until crust turns golden brown and crispy.

Cool before serving

  • Remove from oven and let it cool for 10 minutes. This helps the filling set properly before slicing and serving.

Notes

  • Use rotisserie chicken for faster cooking
  • Add corn for extra sweetness
  • Use puff pastry for a flaky top
  • Add cheese for richer taste
  • Use frozen vegetables to save time
  • Adjust seasoning to your taste
  • Brush egg wash on crust for golden color
