Ingredients
  

  • 1 pound ground beef
  • 3 cups potatoes peeled and diced
  • 1 small onion chopped
  • 2 carrots diced
  • 2 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder

Instructions
 

Cook the beef

  • Heat a skillet and cook ground beef until browned. Break it into small pieces and drain excess fat.

Add to crockpot

  • Place cooked beef into crockpot. Add potatoes, onion, carrots and chicken broth. Stir everything well.

Slow cook

  • Cover and cook on low for 6 hours or high for 3–4 hours until vegetables are soft.

Prepare thick base

  • In a pan, melt butter. Add flour and cook for one minute. Slowly add milk and stir until smooth.

Add creamy mixture

  • Pour the milk mixture into crockpot. Stir well so it blends evenly with soup ingredients.

Add cream and seasoning

  • Add heavy cream, salt, pepper and garlic powder. Stir gently and cook for another 20 minutes.

Add cheese

  • Stir in shredded cheddar cheese. Mix until cheese melts completely and soup becomes creamy.

Adjust texture

  • If soup is too thick, add a little broth or milk. Stir well to get desired consistency.

Serve hot
