Ingredients
  

  • 4 pounds beef short ribs
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 4 garlic cloves minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 sprigs fresh thyme
  • 2 sprigs rosemary

Instructions
 

Preheat Oven

  • Preheat oven to 325°F.

Season Ribs

  • Season short ribs with salt and pepper.

Brown Meat

  • Heat oil in Dutch oven and brown ribs on all sides.

Remove Ribs

  • Set browned ribs aside.

Cook Vegetables

  • Cook onion, carrots, celery and garlic until soft.

Add Tomato Paste

  • Stir in tomato paste and cook briefly.

Add Liquids

  • Pour in red wine and beef broth.

Add Herbs

  • Add thyme and rosemary.

Return Ribs

  • Place short ribs back into the pot.

Cover

  • Cover Dutch oven tightly with lid.

Braise

  • Bake for 2½ to 3 hours until tender.

Rest

  • Let ribs rest for 10 minutes before serving.
